Sugar From Starch: How to Avoid This Controversial Carb and Eat Healthy Plant-Based Starches

Starch is a naturally occurring polysaccharide — complex carbohydrates —produced by green plants. In plants, starches provide a reserve food supply, yet in human’s starches are broken down into sugar molecules that are meant to provide energy. In their whole form, starches are a healthy component of a balanced diet. This includes vegetable derived starches such as legumes, root veggies, and whole grains. Unfortunately, when starches are processed it literally “drains the health right out of them.”

VA: There is a big difference between healthy starches and unhealthy starches. But fortunately it is easy to tell them apart. If it is raw or a whole food, it is a better option, than anything that is processed, which most likely has more sugar and less nutritional value.
