While I’m a lover of all veggies, kale stays on my grocery list for good reason. As a cruciferous veggie in the Brassica family, "leaf cabbage" is low in calories, filled with fiber, and packed with phytonutrients and minerals that are key for short- and long-term health. Plus, it’s an easy addition to basically anything and everything you’re cooking.
